CHICHARRONES DE POLLO
Dominican fried chicken
Serve: 6
INGREDIENTS
Chicken Marinade
- 2 lb chicken thighs (leave skin & cut into small pieces)
- 3 tbsp Pisqueya Adobo
- 6 garlic cloves, minced
- 1/2 cup red wine
- 1/2 cup vinegar
- 1/2 cup lemon juice
- 2 celery stalks
- 1/2 green pepper
- 1 tbsp salt
- 1 tbsp pepper
- 1 tbsp onion powder
- 2 tbsp 1/4 cup of Pisqueya passion fruit spicy sweet hot sauce
Coating
- 1 cup all-purpose flour
- 1 teaspoon Pisqueya Adobo
- 1 tbsp salt
METHOD
1) Blend all the marinade ingredients and add to a bowl with the chicken. Make sure the chicken is fully covered and leave in the fridge for one day.
2) In a shallow plate, mix the ingredients for the flour coating.
3) Heat the oil. While heating up, dredge the chicken through the flour mixture making sure the chicken is fully covered in flour.
4) Deep fry a few pieces of chicken at a time, until golden brown & crispy (4-6 mins each side). Continue frying in batches until done.
5) Before serving, pour Pisqueya passion fruit spicy sweet hot sauce all over the chicken and serve with lime wedges.
*If cooking in the air fryer, cook at 350 ºF for 25 minutes. Make sure to coat the bottom with sprayed oil. Warning, the chicken will not look golden brown like this picture.
