Plantain Fries
PLANTAIN FRIES

INGREDIENTS
- 3 large green plantains
- 1 tbsp. Pisqueya Sazón
- 1 tbsp. Pisqueya Adobo
- 1 garlic clove, shredded
- 3 tbsp. mayonnaise
- 2 tbsp. ketchup
- 1/2 tbsp. Pisqueya Smoky Hot Sauce
- Sea salt, to taste
- Neutral oil, for frying

METHOD
1) Cut the ends of the green plantains, and then cut in half.
2) With the tip of the knife, score a line into the plantain skin and peel.
3) Cut the half of the plantain in half again, and then cut into the shape of fries.
4) Soak the raw plantain fries in salted water for 10 minutes.
5) While the plantain is soaking, make the dipping sauce.
6) In a small bowl, mix the shredded garlic, mayo, ketchup and Pisqueya Smoky Hot Sauce. Set aside
7) Drain the water and pat dry the raw plantain well.
8) Heat about one inch of oil in a heavy bottomed medium size skillet until it reaches a temperature of 345 degree Fahrenheit.
9) Working in batches, add some of the plantain to the oil and fry for 5-7 minutes, or until golden brown and crispy.
10) Using a slotted spatula, scoop the plantains allowing the oil to drain and transfer them into a large bowl.
11) Sprinkle the plantain fries with Pisqueya Sazón and Pisqueya Adobo, and sea salt. Mix to cover all the fries with the seasoning.
12) Serve the plantain fries warm with chopped cilantro and enjoy with spicy mayo- ketchup made with Pisqueya Smoky Hot Sauce.
