Lentil Quinoa Salad
LENTIL QUINOA SALAD

Serve: 3
INGREDIENTS
- 1 cup cooked red quinoa
- 1 cup cooked lentils
- 1/4 cup olive oil
- 1 english cucumber, diced
- 1 red bell pepper, finely chopped
- 1 yellow bell pepper, finely chopped
- 1 cup cherry tomatoes, quartered
- 1/4 red onion, finely chopped
- 1/2 cup cilantro, chopped
- Juice of 1 lemon
- 1 tsp Pisqueya Smoky Hot
- Salt and pepper to taste
METHOD
To a medium bowl, add your diced veggies, quinoa and lentil. Add juice and Hot Sauce then sprinkle a pinch of salt and pepper over top. With a spatula, gently flip and toss your salad until fully combined. Serve with a bed of lettuce.
