Watermelon Salad

INGREDIENTS

  • Small watermelon, cut into bite size cubes
  • ¼ cup red onion, thinly sliced
  • 1 cup queso fresco, crumbled
  • ½ cup fresh cilantro, chopped
  • 1 lime
  • 2 tbsps Pisqueya Sazón
  • Sea salt and black pepper, to taste

METHOD

1) Place the watermelon cubes, sliced red onion, crumbled queso fresco and chopped cilantro in a large bowl.

2) Sprinkle the lime juice over the fruit, onion, cheese and herbs.

3) Sprinkle some salt and pepper, and season with Pisqueya Sazón.

4) Gently, mix all ingredients to combine.

5) Serve immediately and enjoy!.

TIP: If preparing a bowl for a gathering, add all ingredients except the queso fresco. Watermelon tends to juice up so to avoid a mushy cheese, add it when you are ready to serve.
